To begin with, I want to wish all of you a very happy new year. I also want to take this moment to thank you all for supporting me and taking your precious time to visit my blog. I don’t think I would have ever gone ahead with this without the support of my audience, so thank you from my heart. I hope this year brings loads of joy, happiness, and great tasting food to your lives.
Christmas time is definitely my favorite time of the year, and this year it was extra special for me because finally, I had my family here with me! Living on the West Coast, winter isn’t such a big deal, but it has been simply crazy this year around! It was actually a proper white Christmas, and a snow filled new years eve too!
As I recently started my blog, I had big hopes of making a Turkelicious dinner, and I also made sure I would be able to share some good Christmas recipes with you all too! As it was my first attempt to cooking a turkey, I prepped like I have never prepped before. I was genuinely afraid to take on this 6kg massive bird that–and I am being completely honest here–I literally couldn’t lift up without grunting. I am pretty happy I had my family around because I needed some serious help throughout the whole turkey process.
Of course with any Turkey dinner the cranberry sauce, stuffing, gravy and other sides are essential. Below I am going to add links to each of the different recipes and you can click each one to get an idea of each dish separately.
There are a couple of Christmas dinner essentials that I learned from one of my favorite cooking role models, Jamie Oliver. Firstly, it is essential to make sure that you take the turkey out and let it sit at room temperature for at least 2 hours before cooking it. Second, I personally think prepping as much as you can the day before is also very, very helpful. For instance, the cranberry sauce, stuffing, ingredients for gravy and buttering the turkey can very easily be done the day before. Lastly, there is one other not just important, but essential rule and that is to rest the Turkey for at least 2 hours once cooked and out of the oven.
So to start off we have my Christmassy and citrus filled cranberry sauce. It took literally 5 minutes to prep, but once on the stove, you can let it simmer for around 45 minutes and cook on its own. Here’s the link to my Cranberry Sauce recipe.
Now to get on with the stuffing. This is another very simple recipe, however it is one of those dishes which don’t really look great, but taste unreal. Click here for the recipe of my very merry Christmas stuffing.
Some other successful side dishes I had at my dinner party were my roasted squash and potatoes and my beautiful truffle infused roasted medley of mushrooms. When hosting dinners, you want to focus on dishes which have a lot of flavour in itself, that you don’t really have to put too much into it.
