For the last couple of weeks, I have stepped away from blogging and just started reconfiguring my life for the beginning of this beautiful summer. While working on some beautiful summer recipes, I also had to start prepping myself for the month of Ramadan ahead of his. Given the unbelievably cold winter we had, we are expecting quite a hot summer as well, and I thought this is the perfect time to share my Melon Feta Salad recipe.
Generally, for Ramadan, we are fasting for long hours and this is a perfect recipe to begin iftar with a refreshing and light salad. I call it the Melon Feta Salad because you can substitute for any choice of melon and even add in a couple different types as well. Super refreshing and just so simple to make, it is perfect for a light lunch or a family dinner.

1/2 cup of crumbled Feta Cheese
Bunch of Mint Leaves
1 Granny Smith apple (optional)
2 Tbsp Extra Virgin Olive Oil
1 Tbsp Balsamic Vinegar
1/2 Tsp Salt
1 Tsp crushed Black Pepper
First, cut watermelon into equal bite-size chunks. Then roughly chop mint leaves and mix in a bowl with watermelons. Thinly slice strips of apples, or just small cubes and add them into the bowl with the melons.
Now add salt, pepper, oil, and balsamic vinegar and give it a nice toss around. Finally, mix in crumbled feta cheese, and sprinkle some generously over the top and serve.
