Roasted Truffle Mushrooms

There are some vegetables in this world that have so much flavor in them, that just a little bit of seasoning does justice. Mushrooms are one such boastful vegetable that have such lively flavors that not only are they good on their own, but it heightens the base of any savory dish. For my Christmas dinner, I decided to roast a medley of mushrooms simply with some chopped asparagus, herbs and truffle oil. This dish is light, flavorful and a perfect juicy addition to the rest of the meal. 

Just as a tip I would suggest cooking this just as your guests are coming in, as it is best when served hot.  

Medley of mushrooms of your choice 500g
Chopped asparagus 100g

Truffle oil 2-3 tbsp (If you don’t have truffle oil, just substitute with regular olive oil)
2 tbsp Olive oil
4-5 sprigs of thyme
1.5 tsp Salt
1 tbsp Black Pepper
5-6 unpeeled whole cloves of garlic 

First, heat oven to 375 degrees Fahrenheit. In a baking dish, mix all ingredients well and place into the oven for 15 minutes. After 15 minutes, using a spatula give the mushrooms a good mix, and place it back into the oven for another 10 minutes. Once ready, taste to make sure you like the flavors, just pick out the thyme and garlic peels and serve!
